When we look at the communities of today, we often don’t think about the need to source simple things like food. We often think Publix indicates a successful bridge of low cost processed foods that meet our budgets and focus on the ‘feeding’ the town we live in.
Ben Link and I discuss organic food distribution in the Appalachians and what it may take for Columbus to adopt a similar strategy. Ben is heading off a topic so new that most people I discuss with are unaware of or not sure what the issues are. Permaculture and Urban Farming are results from the current level of knowledge about food health and food access are spilling over into the local communities.
